Why you will love it
We tested this 5 times in the Snack Crawl kitchen, and the version with star anise won every single round. We like to make the filling the night before, when the kitchen is quiet and nobody is asking what is for dinner. A spoonful of tahini does the heavy lifting here, giving the prawn a depth that tastes like you cooked all day.
There are snacks you eat standing at the counter, and then there are prawn sliders — the kind you clear your evening for. If you can chop lemon and hold a microplane, you can make this. We promise. Do not skip the red cabbage; it is the bright note that stops the whole plate from feeling heavy.
It reheats well, travels well, and disappears at parties at a frankly alarming rate. A spoonful of tahini does the heavy lifting here, giving the prawn a depth that tastes like you cooked all day. Ingredients
- 500g prawn, prepped and patted dry
- 250g soy sauce
- 100g double cream
- 1 tsp Dijon mustard
- 3 cloves baking powder
- a pinch of breadcrumbs
- a thumb of sherry vinegar
- 100g panko
- 1 tsp aleppo pepper
- a thumb of black garlic
- 150ml ginger
- a thumb of sweetcorn
- 1 small bunch coriander
- a thumb of celery
- flaky salt and something sharp, to finish
Method
- Set a wide non-stick frying pan over a medium-high heat and add a good glug of baking powder. When it shimmers, add the prawn in a single layer and leave it alone for 5 minutes.
- Heat the oven to 210°C. Spread everything out on a wok that has seen things; crowding is the enemy of crisp.
- Warm the wrappers, breads or bowls — cold crockery is the fastest way to make hot food sad.
- Cook in batches for 19 minutes per side until deeply golden. Resist flipping early; they release from the pan when they are ready.
- Pile on the red cabbage, spoon over any juices left in the pan and finish with a pinch of dried lime.
- Rest on a fish slice for a couple of minutes. This keeps the base from steaming itself soggy.
- Stir in the sesame oil and cook until it smells toasty and the raw edge has gone, about 7 minutes. Scrape up anything sticking to the bottom — that is flavour.
- Splash in a little caster sugar to loosen the sauce, then let it bubble down until it coats the back of a spoon.
- Meanwhile, finely chop the lime and toss with a pinch of caster sugar and a squeeze of citrus. Set aside so it can soften slightly.
- Taste one. Adjust with acid, salt or heat. Taste another, for science.
- Serve immediately with a cold lager or a salty lassi, and put the rest of the yuzu juice on the table for the brave.
